Ingredients
- 250 g butter, chopped
- 1 teaspoon vanilla essence
- 2/3 cup brown sugar
- 2/3 cup caster sugar
- 2 eggs, lightly beaten
- 2 1/2 cups plain flour
- 1 teaspoon bicarbonate of soda
- 3/4 - 1 cup smooth peanut butter
How to...
- Beat butter, essences, sugars and eggs in a medium bowl with electric mixer until combined. Stir in dry ingredients
- Drop level tablespoons of misture, about 4 cm apart on to greased trays
- Cook in a moderately hot oven, 190 degrees C, for about 10 minutes or until lightly browned. Remove from oven. Use the back of a teaspoon to make an indentation into cookies. Fill dent with about 1 teaspoon of peanut butter and leave it to cool in trays.
